Feta Florentine Burgers

List of Ingredients
- 3/4 c. mayonnaise
- Olive oil
- 1/2 c. finely chopped onion
- 1/2 c. finely chopped red bell pepper
- 1 c. chopped white mushrooms
- 1-1/2 c, thinly sliced fresh spinach leaves
- 2-1/2 lb. ground sirloin
- 1/2 c. crumbled feta cheese
- 2 tsp salt
- 1-1/2 c. thinly sliced prosciutto
- 6 slices mozzarella or provolone cheese
- 6 ciabatta rolls, split
- 1 garlic clove, peeled and cut in half lengthwise
- 6 Tbsp. grated Parmesan cheese
- 3 c. mesclun greens, optional
Instructions
- Saute the onion, bell pepper and mushrooms in 2 Tbsp olive oil in heavy skillet until tender, about 5 min. Add the spinach leaves and cook until wilted, about 3 min. Transfer to a large mixing bowl, adding the sirloin, feta cheese and salt. Gently mix together to form 6 patties.
- In same skillet, heat 2 Tbsp. olive oil. Saute the prosciutto until crisped, about 5-8 min. Transfer to paper towel to drain.
- Using same skillet, heat a little olive oil and brown sirloin patties, then cover a continue cooking about 4 min. Turn patties over and continue cooking other side, covered, until done (internal temp. 160 degrees). Place a slice of cheese on each pattie, turn off heat, cover and let sit til cheese melts.
- Turn broiler on HI. With 4 Tbsp olive oil, lightly brush each side of rolls and then rub garlic over them. Sprinkle with the Parmesan cheese and pat in. Place under broiler and lightly toast.
- Spread mayonnaise on insides of rolls, place patties on and sprinkle with the crisped prosciutto. Add greens, if desired. Top with other half of roll, serve and enjoy!
