    Feta Florentine Burgers

    List of Ingredients


    • 3/4 c. mayonnaise
    • Olive oil
    • 1/2 c. finely chopped onion
    • 1/2 c. finely chopped red bell pepper
    • 1 c. chopped white mushrooms
    • 1-1/2 c, thinly sliced fresh spinach leaves
    • 2-1/2 lb. ground sirloin
    • 1/2 c. crumbled feta cheese
    • 2 tsp salt
    • 1-1/2 c. thinly sliced prosciutto
    • 6 slices mozzarella or provolone cheese
    • 6 ciabatta rolls, split
    • 1 garlic clove, peeled and cut in half lengthwise
    • 6 Tbsp. grated Parmesan cheese
    • 3 c. mesclun greens, optional


    Instructions


    1. Saute the onion, bell pepper and mushrooms in 2 Tbsp olive oil in heavy skillet until tender, about 5 min. Add the spinach leaves and cook until wilted, about 3 min. Transfer to a large mixing bowl, adding the sirloin, feta cheese and salt. Gently mix together to form 6 patties.

    2. In same skillet, heat 2 Tbsp. olive oil. Saute the prosciutto until crisped, about 5-8 min. Transfer to paper towel to drain.

    3. Using same skillet, heat a little olive oil and brown sirloin patties, then cover a continue cooking about 4 min. Turn patties over and continue cooking other side, covered, until done (internal temp. 160 degrees). Place a slice of cheese on each pattie, turn off heat, cover and let sit til cheese melts.

    4. Turn broiler on HI. With 4 Tbsp olive oil, lightly brush each side of rolls and then rub garlic over them. Sprinkle with the Parmesan cheese and pat in. Place under broiler and lightly toast.

    5. Spread mayonnaise on insides of rolls, place patties on and sprinkle with the crisped prosciutto. Add greens, if desired. Top with other half of roll, serve and enjoy!
