    addapted from a recipe on Recipe Circus

    List of Ingredients




    1 lrg. onion, chopped
    1 Tbsp. olive oil
    1 loop of Keilbasa sausage, chopped
    2 cans black-eyed peas, drained
    1 can navy beans, drained
    1 c. rice, cooked
    1 tsp. garlic powder
    1/2 tsp. cayenne pepper
    1/2 tso, thyme
    salt/papper to taste
    2 cans chicken broth
    fresh baby spinach (as much as you like)

    Recipe



    Heat oil in large pot. Add onion and cook until translucent. Add sausage, peas and beans, ruce, broth and seasonings. Stir well, mashing up some of the beans to thicken soup. Heat until it starts to simmer and then add spinach, a little at a time and continue simmering until spinach wilts.
