    List of Ingredients




    SOUP:
    1 lb. lean ground beef, Italian sausage or mixture of both.
    1 small onion, chopped
    4 cloves garlic, minced
    1 Tbsp. dried basil
    1/2 tsp. dried oregano
    1 tsp. dried parsley
    2 Tbsp. tomato paste
    3 c. chicken broth
    2 c. beef broth
    1, 15 oz. can crushed tomatoes
    8 lasagna noodles broken into pieces
    Salt to taste (optional)

    TOPPINGS:
    Shredded mozzarella
    Shredded Parmesan
    Ricotta

    In a large pot or dutch oven brown the ground beef with the onion, garlic, basil, oregano and parsley. Drain any excess grease. Stir in the tomato paste. Add the remaining soup ingredients and stir well to combine. Bring to a boil. Cover and reduce heat to a simmer. Cook for 20 min. stirring occasionally so the noodles don't stick to the bottom. Add salt to taste if desired. Serve into bowls and top with desired toppings. Serves 8.
