    SPLIT PEA SOUP

    List of Ingredients


    • 1 lb. pkg. dried split peas, soaked overnight
    • 2 quarts (8 c) water
    • 2-3 stalks celery, coarsly cut
    • 1 lrg. onion, quartered
    • 2 carrots, coarsly cut
    • 1-2 ham hocks, scored
    • Instant mashed potato flakes, optional


    Instructions


    1. Combine all ingredients except peas & potato flakes in large pot and bring to boil. Simmer 2-3 hours (until meat pulls away from bone easily). Strain broth. Pick meat off bones and add to strained broth along with soaked peas, salt/pepper to taste and 1 tsp sugar. Sometimes I add 1 c of barley at this point (my Mother didn't) Simmer, covered, about 1 hour or until peas are soft. Check every once in awhile so see if more water should be added. If you want it thicker, gradually stir in some instant mashed potato flakes until it thickens to your liking.


    Final Comments


    Now that we are more health conscious, I make the broth the day before, refrigerate, and next day skim off the fat that forms on top. Then I procede with rest of the recipe.
