    CHEESY EGGPLANT PARMESAN

    Recipe Introduction

    I chose to cook eggplant under the broiler instead of pan frying to cut down on the fat content.

    List of Ingredients

    Nonstick cooking spray
    1 lrg. eggplant, peeled and sliced crosswise into 3/4" rounds
    Salt
    1 tsp. ground pepper
    1 1/2 c. low-fat cottage cheese
    1 lrg. egg white
    1/2 c. finely grated parmesan cheese, divided
    2 c. jarred low fat marinara sauce
    1/2 c. shredded part-skim mozzarella cheese
    Flat leaf parsley, for garnish

    Recipe

    Turn on broiler.

    Spray a sheet pan with cooking spray and arrange eggplant slices on it and season with salt and pepper. Spray cooking spray on each slice. Broil for about 4 min, turn and spray more cooking spray on slices. Broil for another 4 min., until slices are tender.

    Reduce oven temp to 350.

    In a food processor, pulse the cottage cheese until smooth. Transfer to bowl and stir in the egg white and 1//4 c parmesan cheese.

    Lightly coat a 11 x 7-in. baking dish with cooking spray. Add half the eggplant slices. Top with cottage cheese mixture. Add remaining eggplant slices, followed by marinara sauce. Sprinkle with mozarella cheese and the remaining parmesan cheese. Bake until hot and bubbly, 30-40 min.. Cool 15 min. before surving. Garnish with parsley.
    Serves 6.
