    Smashed and Roasted Potatoes

    • 2-3 lbs baby Yukon Gold potatoes (or red)
    • salt/pepper
    • Extra virgin olive oil


    Instructions


    1. Boil potatoes in salted water until tender; drain, and place on paper towel or clean kitchen towel to dry.
    2. Line a baking sheet with parchment paper, and place potatoes onto parchment.
    3. Cover with a second sheet of parchment, and using a heavy can or the palm of our hand, smash potatoes to a 1/2" thickness.
    4. At this point, you can cover and refrigerate or proceed as directed.
    5. Preheat oven to 450 deg.
    6. Drizzle smashed potatoes with extra virgin olive oil, about 1/2 tsp. per potato.
    7. Sprinkle on salt and pepper.
    8. Roast at 450 for 45 minutes.
    9. Serve as it, or with toppings of choice.
    10. Some recipes say to flip potatoes over midway - I didn't, and they came out perfectly.
