    BEST HOT AND SOUR SOUP


    List of Ingredients


    • 1/ 2 cup shitake mushrooms sliced (reconstitute if using dried)
    • 4 cups vegetable stock
    • 1 block of extra firm tofu, cubed, 1/2"
    • 6 tablespoons rice vinegar, (have used white in a pinch)
    • 2 tablespoons soy sauce
    • 3 green onions, sliced
    • 2 eggs
    • 2 tablespoons corn starch
    • 1 teaspoon ground black pepper
    • 1 teaspoon salt
    • 1-2 red chilies chopped (to taste)
    • 1/2" piece of FRESH ginger, grated.
    • 2-3 cloves of garlic, finely chopped.


    Instructions


    1. Bring the veg. stock to a boil.
    2. Add the mushrooms, tofu, green onions, vinegar, soy sauce, salt, chiles, ginger and garlic to the stock and return to a boil.
    3. Simmer for 5-6 minutes.
    4. In a small bowl, beat the 2 eggs together.
    5. In a seperate bowl mix the corn starch with a small amount of water, should be thin.
    6. While stirring the stock, add the cornstarch and then the egg. The egg will form threads through the soup.
    7. Return the soup to a boil, simmer for another 5 minutes.
    8. Taste the soup and adjust the the vnegar and chilies for your liking.
