    Plum Bread

    Source of Recipe

    unknown

    List of Ingredients

1-1/2 cups pitted dried plums (prunes)
    1 cup sugar
    1 egg, beaten
2 tbsps vegetable oil or melted shortening
    1 cup buttermilk
    1 tsp baking soda
    1/4 tsp baking powder
    1/2 tsp salt
    1-1/2 cups all-purpose flour
    1 cup whole wheat flour
1 cup chopped pecans or walnuts

Heat oven to 350 degrees. Grease a 5-by-9-inch loaf pan.

Place dried plums in medium saucepan and add enough water to cover; bring to
a boil; reduce heat and simmer until fruit is soft, about 10 minutes.
Reserve 1/2 cup of cooking liquid; drain remaining liquid and chop the dried
    plums.

Combine chopped fruit, reserved cooking liquid, sugar, egg, oil, buttermilk,
soda, baking powder, salt, both flours and nuts and stir just until all
ingredients are moist. Pour into prepared pan and bake until a toothpick
inserted in the middle comes out clean, about 1 hour.
