    Cheesy Chili Meat Loaf

    1/2 c. finely chopped onion
    1/2 c. finely chopped green bell pepper
    2 tabl. water
    16 oz extra lean ground sirloin beef or turkey breast
    1/2 cup + 1 tabl. (2 1/4 oz) shredded Kraft Reduced fat Cheddar cheese
    3 slices reduced calorie white bread, made into soft cumbs
    1 tsp. Jo's Chili seasoning or any chili seasoning
    1 (8 oz) can Hunt's Tomato Sauce (divided)
    1 tabl. Splenda Granular
    1 tsp. dried parsley flakes

    In a small microwavable bowl, combine onion, green pepper and water. Cover and microwave on HIGH (100% power) for 2 min. Drain. In a large bowl, combine meat, cheese, bread crumbs, chili seasoning, 1/3 c. tomato sauce and drained vegetables. Pat mixture into a microwavable baking ring. Microwave on HIGH for 8 min. Stir Splenda and parsley flakes into remaining 2/3 c. of tomato sauce. Spoon sauce mixture evenly over top. Continue to microwave on HIGH for 2 min. Let set for 5 min. Cut into 6 servings.
