List of Ingredients
16 ounces 90% lean ground beef
1/2 cup crushed Doritos reduced fat Nacho Chips
3/4 cup chunky salsa -- divided, see recipe
2 teaspoons Jo's Chili seasoning -- or any other reputable brand
1 tablespoon Brown Sugar Twin
1 teaspoon dried parsley flakes
1/4 cup reduced sodium ketchup
6 tablespoons fat free sour cream
1. Preheat oven to 350 degrees F. Spray an 8x8 baking dish with butter flavored cooking spray. In a large bowl, combine meat, nacho chips, 1/4 cup salsa, Jo's chili seasoning, Brown Sugar Twin and parsley flakes. Mix well to combine. Pat mixture into prepared baking dish. Bake for 30 minutes. In a small bowl, combine remaining 1/2 cup salsa and ketchup. Spoon mixture evenly over top of partially baked meat loaf. Continue baking for 20 minutes or until meat loaf is done. Place baking dish on a wire rack and let set for 5 minutes. Cut into 6 servings. When serving, top each piece with 1 tablespoon sour cream.
