Mexican Meatloaf*

List of Ingredients
1 lb. ground turkey, thawed
1 oz. tortilla chips, crushed
2 TBS. chopped green pepper
1 (16 oz.) can tomato sauce
1/4 c. chopped onion
1 pkg. taco seasoning mix
Reserve one cup of tomato sauce.
Combine all other ingredients. Place in loaf pan. Bake at 350 degrees for 45-50 minutes. Heat reserved cup of tomato sauce to serve with meatloaf, if desired.
NOTE: I use an 8 oz. can of tomato sauce and substitute salsa as a topping when serving. Also, I tried this using lean ground beef instead of turkey, but I think the turkey is better.
