Tiny But Mighty Meatloaf*

List of Ingredients
8 oz. ground 90% lean turkey or beef
1 slice white reduced-calorie bread, torn into
tiny pieces
2 T. skim milk
1 tea. dried onion flakes
1/4 C. Heinz Light Harvest Ketchup or any
reduced-sodium ketchup
1/8 tea. dried minced garlic
1/8 tea. black pepper
1 tea. Worcestershire sauce
In a medium bowl, combine meat, bread, skim milk, onion flakes, 2 tablespoons ketchup, garlic, black pepper, and Worcestershire sauce. Mix well to combine. Pat mixture into a 6 1/2 inch by 4 inch glass loaf pan. Microwave on HIGH (100% power) for 3 minutes, turning pan after 2 minutes. Spread remaining 2 tablespoons ketchup over top. Continue to microwave on HIGH for 2 to 3 minutes. Let set for 2 minutes. Divide into 2 servings.

I made this exactly like the recipe, except I used regular ketchup. I have a turntable in my microwave, so didn't have to turn it. I cooked it 3 minutes, added ketchup on top, and cooked for another 3 minutes. Let set for 2 minutes. Was great and FAST. My husband and I decided definitely a keeper! Hope your husband likes it.
