Mexican-Style Ground Beef Hash*

List of Ingredients
1 lb extra-lean ground beef
2 medium celery stalks, chopped
1 large onion, chopped
1/2 cup tomato ketchup or chili sauce
Scant 1/2 tsp ground cinnamon
Scant 1/4 tsp salt
1/4 tsp black pepper, or more to taste
1 cup diced canned tomatoes, including juice
1 medium Golden Delicious or other sweet, flavorful apple, chopped
(unpeeled)
1/4 cup dark or golden raisins
3 tbsps coarsely chopped pimiento-stuffed olives
2 cups leftover diced cooked potatoes (or 2 cups cooked brown or white rice)
Combine the beef, celery, and onion in a 12-inch nonstick skillet
over high heat. Cook, stirring, until the beef is just cooked
through, 5 to 6 minutes. Stir in the ketchup, cinnamon, salt, pepper,
tomatoes, apples, raisins, and olives. Adjust the heat so the hash
boils gently, and cook, stirring occasionally, about 8 to 10 minutes
until the flavors are well blended. Stir in the cooked potatoes (or
rice). Heat until piping hot and serve.
Tip: If you don't happen to have any diced leftover cooked potato,
it's easy to ready some by "baking" several well-scrubbed red bliss
(or other thin-skinned) potatoes in a microwave oven. Simply puncture
each potato all the way through with a skewer or thin-bladed knife.
Then, place on a microwave-safe dish, cover loosely with wax paper,
and microwave on high power for 5 to 7 minutes or until tender when
poked with a skewer in the thickest part.
