Potato-Cabbage Skillet with Sausage*

2-1/4 cups fat-free, low-sodium, or regular chicken broth
1/8 tsp black pepper, or to taste
2 medium red bliss or other think-skinned boiling potatoes, very thinly sliced
1 cup frozen (thawed) cut green beans
2 or 3 green onions, including tender tops, coarsely chopped
6 cups very coarsely sliced green cabbage
3/4 lb lower-fat smoked turkey Kielbasa sausage or similar-style
sausage in casings, cut crosswise into 1/4-inch slices
In a 12-inch or similar nonstick skillet over medium-high heat,
combine the broth and pepper and bring to a boil. Add the potato
slices and green beans and boil, uncovered and stirring occasionally,
for 6 to 8 minutes, or until the slices are barely cooked through
when tested with a fork. If the skillet begins to boil dry; add a
little water. Sprinkle the green onions, then the cabbage, over the
potatoes. Top with the sausage slices. Reduce the heat so the pan
simmers gently. Cover tightly and cook 4 to 6 minutes or until
cabbage is just tender when tested with a fork. Stir to combine
ingredients, then spoon into soup plates.
Serves 4 (1-1/2 cups vegetables and sausage)
