Classic Chippers
1/2 cup I Can't Believe It's Not Butter Light Margarine
1/2 cup unsweetened applesauce
1 1/2 cups granular Splenda
1 egg or equivalent in egg subsitute
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspon table salt
1/2 cup mini chocolate chips
Preheat oven to 375 degrees. Spray 2 baking sheets with butter-flavored cooking spray. In a large bowl, cream margarine, applesauce and Splenda. Stir in egg and vanilla extract. Add flour, baking soda, and salt. Mix gently just to combine. Fold in chocolate chips. Drop dough by tablespoonful to form 24 cookies. Spray the bottom of a glass with butter-flavored cooking spray. Flatten each cookie with glass bottom. Bake for 10 minutes or until lightly browned. Place cookies on a wire rack and allow to cool.
