    2 medium onions, diced
    2 tbsp canola oil
    1 pound 95% lean ground beef
    28 oz. can whole tomatoes (I quarted them)
    14.5 oz. can petite diced tomatoes
    2 cans kidney beans
    chili spices (to taste)

    In a 5-quart dutch oven, brown the onions in the oil. When they begin to turn translucent, add the ground beef and cook until done. Drain and add the chili spices. Add both cans of tomatoes and beans. Bring to a boil. Reduce heat and simmer for about an hour to allow flavors to blend.

    This recipe made 10 cups of chili. I topped mine with a bit of fat-free shredded cheese.
