Serves: 4 (One Cup Servings)

Ingredients:
2 slices light whole-wheat bread, torn into pieces
1 egg
1 teaspoon minced garlic
1 cup frozen chopped onion,celery and pepper blend
1/4 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds ground round
1/2 cup skim milk
1/2 cup fat-free BBQ sauce
vegetable cooking spray
Preparation:
Using a sharp knife, finely chop bread and vegetable blend. Combine meat with next 5 ingredients, mixing well. Shape mixture into the shape of a 4x8 inch loaf. Place loaf on a rack coated with cooking spray. Then, place on a foil lined roasting pan. Bake at 350 degrees for 1 hour and 10 minutes. Let cool and divide in half. Each half serves 4. The second half can be frozen for later use.
