IMPOSSIBLE TUNA-CHEESE PIE*

2 medium onion -- chopped
non-stick cooking spray
12 ounces tuna in water, canned -- drained
2 cups reduced fat cheddar cheese -- shredded
1 cup reduced fat Bisquick®
1 1/4 cups milk, 2% lowfat
1/4 teaspoon salt -- optional
1/8 teaspoon ground black pepper
3 large Eggs
2 tomatoes -- sliced
1. Heat oven to 400~. Grease 8x8x2" square baking dish.
2. Cook onions in 10" skillet over low heat, stirring occasionally, until onions are light brown.
3. Sprinkle tuna, 1 cup of the cheese and the onions in baking dish.
4. Beat Bisquick, milk, salt, pepper and eggs with wire whisk or hand beater until almost smooth, about 1 minute. Pour into baking dish.
5. Bake until knife inserted in center comes out clean, 25 to 30 minutes.
6. Top with tomato slices and remaining cheese. Bake until cheese is melted 3 to 5 minutes.
