    Balsamic Chicken with Rosemary *

    Serves: 4
    Exchanges: 3-1/2 meats, 1/2 fat

    1 tablespoon olive oil
    4 teaspoons balsamic vinegar
    1 teaspoon grated lemon peel
    1 teaspoon lemon juice
    1/2 teaspoon dried rosemary
    1/4teaspoon garlic seasoning
    1/4teaspoon salt
    1/8 teaspoon pepper
    4 (4-ounce) boneless skinless chicken breast


    Preparation:
    In a small bowl combine all ingredients except chicken, and beat with wire whisk until blended. Place chicken in shallow dish and pour mixture over chicken and let marinate, covered, at room temperature for 15 minutes. Chicken may be grilled over medium heat or broiled. Grill for 8-10 minutes on each side or broil 4-6 inches from heat for 8-10 minutes turning once. Chicken does not absorb much of the oil in the marinate mixture.
