    Peanut-Soy Dressing
    6 cups coleslaw mix (from a 16 oz bag)
    3 cups washed fresh spinach leaves (from a 10 oz bag)
    3 cups cut-up cooked chicken
    1 medium bell pepper, cut into bite-size strips
    1 (8 oz) can bamboo shoots, rinsed and drained

    Make Peanut-Soy Dressing. Toss remaining ingredients in large bowl; drizzle
    with Dressing.

    Serves 6

    PEANUT-SOY DRESSING: Beat 3 tbsps reduced-sodium soy sauce, 3
    tbsps cider vinegar, 2 tbsps honey, 1 tbsp creamy peanut
    butter, 1/2 tsp crushed red pepper and 1/2 tsp grated ginger root
    in a small bowl with wire whisk until blended.
