    Serves: 4

    Exchanges: 1/2 bread, 1-1/2 vegetable, 1 fat

    Ingredients:
    1 cup cooked Garbanzo beans
    2 cups diced tomatoes
    1 cup diced green bell pepper
    1 cup diced peeled cucumber
    1/2 cup fresh minced Italian parsley
    1/3 cup sliced green onions
    1/4 cup fresh lemon juice
    2 tablespoons water
    1 tablespoon olive oil
    Salt and freshly ground pepper to taste

    Preparation:
    Combine all ingredients in a large bowl and refrigerate for 1 hour before serving. Serving size equals 1-1/2 cups.
