"Poor Man's" Pesto
2 c fresh spinach leaves
1/4 c (1 oz) chopped walnuts
1 garlic clove
2 TBSP olive oil
1/8 tsp. black pepper
1/4 c (3/4 oz) Kraft Reduced Fat Parmesan Style Grated Topping
In a food processor, very finely chop spinach, walnuts and garlic. Remove to a medium bowl and add olive oil, black pepper and Parmesan cheese. Stir until a thick paste forms.
