    Great served over grilled fish or chicken. Refrigerate for up to one week.

    Serves: Makes about 2 cups. (Serves 8)

    Exchanges: 1/2 vegetable



    List of Ingredients




    1 14.5 ounce can petite diced tomatoes with olive oil and garlic
    1/4 cup chopped fresh basil
    2 tablespoons chopped red onion
    2 tablespoons red wine vinegar
    1 teaspoon olive oil
    1/4 teaspoon salt
    1/8 teaspoon black pepper

    Preparation:
    Combine all ingredients in a small bowl. Refrigerate until ready to serve.
