    4 cups chicken broth made with boullion cubes (0 pts.)
    1 cup canned diced tomatoes with juice (2 pts.)
    5 scallions, chopped, or substitute 1/2 of a medium onion, chopped (0 pts)
    about 6-8 brussel sprouts, chopped (0 pts.)
    15 croutons (to thicken) (about 2 pts.)
    4 TB half and half (2 pts.)


    Instructions


    Follow instructions for making chicken broth.

    When broth is done, add vegetables and croutons. Heat on medium until veggies are cooked and croutons have mostly dissolved.

    Stir in half and half and heat over low.
