Southwestern Chicken Tomato Soup *****
2 cups canned chicken broth
4 oz. diced cooked chicken
2 cups canned tomatoes with juice, chopped
1/2 cup salsa
1/2 cup diced onion
1 oz. corn chips, coarsely chopped
3/4 oz. shredded Monterey Jack or Taco cheese
In large saucepan combine chicken broth, chicken, tomatoes with juice, salsa and diced onion. Simmer for about 30 minutes. Add corn chips and cook about 5 minutes longer. Ladle into 4 soup bowls and top evenly with shredded cheese just before serving.
