    12 oz. lean, ground round beef
    1 cup chopped onion
    1 cup chopped bell pepper
    2 jalapeño peppers
    1 tsp. cumin
    3 cups canned kidney beans, rinsed and drained
    3 cups vegetable broth
    2 cups low-sodium salsa
    4 Tbsp. fresh cilantro

    Dice jalapeño and chop cilantro; set aside. In a medium-sized pot over medium heat, cook ground beef, chopped onion, both peppers and cumin, stirring occasionally, until beef is no longer pink, about 8 to 10 minutes. Add beans, broth and salsa; reduce heat to a simmer and cook for about 10 to 15 minutes. Serve topped with chopped cilantro.

    Nutritional values per serving: 257 calories, 25 grams protein, 30 grams carbohydrate, 4 grams fat (2 grams saturated fat), 740 milligrams sodium, 9 grams fiber, 7 grams sugar and 45 milligrams cholesterol.
