    American Diabetes Association One Pot Meals for People with Diabetes

    List of Ingredients




    2 tbsps olive oil
    1 medium onion, chopped
    1 cup sliced zucchini
    1 (15 oz) chunky Italian-style tomato sauce
    6 large green pimiento olives, sliced
    1 lb ready-to-cook shrimp
    1/2 cup crumbled feta cheese
    5 ozs (about 1-1/2 cups) penne or other similar pasta, cooked
    according to pkg directions

    In a large nonstick skillet, combine the oil, onion and zucchini.
    Cook over medium heat, stirring frequently, until the onion has
    softened, about 5 to 6 minutes. Stir in the tomato sauce and olives,
    and simmer for 2 or 3 minutes. Stir in shrimp, and cook an additional
    minute. Stir in cheese, and simmer an additional 1 to 2 minutes.
    Serve over pasta.

    Serves 5 (1 cup, plus 1 ounce pasta)
