    List of Ingredients





    2 tablespoons garlic
    14 1/2 ounces low sodium chicken broth -- fat free variety
    1 cup chopped mushrooms
    4 plum tomatoes
    4 ounces shrimp -- medium, butterflied
    1 cup cooked spaghetti
    4 tablespoons parmesan cheese -- grated
    2 tablespoons chopped parsley
    1/2 cup chopped onion
    1 lemon -- juice only
    non-stick cooking spray

    1. In skillet sprayed with Pam on medium-high heat; add minced garlic,
    minced onion and lightly brown.

    2. Pour in chicken broth and mushrooms and cook for about 10 minutes.

    3. Add in chopped plum tomatoes, lemon and cook for another 5 minutes.

    4. Add in shrimp and bring to a boil. Once boiling, turn heat to low and
    simmer until shrimp is cooked approximately 5 minutes.

    5. Serve in bowl over 1/2 cup cooked pasta and sprinkle with 2 tablespoons
    of Parmesan cheese and parsley.
