    Core Vegetable Beef Soup

    List of Ingredients




    11 oz can corn mostly drained (I like super sweet yellow & white vacuum packed)
    2 carrots sliced pretty thin
    2 stalks celery chopped
    1 8 1/2 oz. can sweet peas mostly drained
    2 small potatoes cut up small
    1 small chopped onion
    Black pepper to taste - it is best with quite a bit of pepper
    Salt to taste
    12 cups water (this will fill up a 5 quart crockpot)
    14 beef bouillon cubes


    Put everything into crockpot (veggies first).

    Give it a stir and cook on low for 8 hours (you should stir it after a couple of hours to dissolve the beef cubes) or untill carrots and potatos are done. Add more salt or pepper if needed.


    Special Notes


    This is really good and tasty basic vegetable beef soup - except no actual beef. I guessed on the points per serving (I'm doing core so I don't calculate points for this type of stuff) since it has peas corn and potatos in it.

    As you can see it makes a ton of soup (about 5 quarts). But you can freeze it for later or just have a lot of soup during the week.
