    List of Ingredients




    4 med. swt. potatoes
    1/2 C. FF milk
    1 (1") piece fresh ginger
    (peeled & grated)
    1/2 tsp. salt
    1/4 tsp. ground pepper
    1 Tbl. unsalted butter
    3/4 lb. large sea scallops, sliced into 1/4" thick rounds
    2 scallions, thinly sliced

    Recipe



    Preheat oven to 400 F. Pierce potatoes in several places. Bake until tender (about 45 min.)

    Halve pot. lengthwise & scoop out pulp into med. bowl. Stir in milk, ginger, salt & ppr. Beat w/electric mixer until blended & smooth. Keep warm.

    Heat butter in lg. skillet over med. high heat until butter turns slightly brown. Add scallops & cook, turning once, until browned on the outside and opaque inside. ( about 1min. on each side). Sprinkle with scallions and serve with potatoes.
