    List of Ingredients


    • 1 each (5 oz) portobello mushroom cap
    • 2 each grilled zucchini slices
    • 1 oz roasted red pepper
    • focaccia bun (BAKED, SPLIT)
    • 2 tsp margrine, melted
    • 1 sauted onion
    • 1 oz mozzarella cheese


    Instructions


    1. Place mushroom cap, zucchini slices and red pepper in skillet and saute until hot, about 3 minutes. Be sure not to dry out vegetables, they should moist and hot.
    2. Brush both sides of the bun with margrine and toast.
    3. Place mushroom cap on the bottom half of the bun, cut zucchini slices in half and shingle over mushrooms. Place red pepper over zucchini,onions over red pepper and melt mozzarella over all. Cover with top of bun and cut sandwich in half.
