    Dried Cherry Chocolate Chunk Cookies

    Recipe Introduction


    Hello from the great state of Michigan. Just a little sample of dried cherries from our GREAT state. Enjoy!This is one of my favorite recipes. You may substitute dried cranberries for the dried cherries!


    List of Ingredients


    • 1 1/2 cups all purpose flour
    • 1 tsp. baking soda
    • 2 sticks (1 cup) butter at room temp
    • 3/4 cup light brown sugar
    • 3/4 cup sugar
    • 1 large egg
    • 1 1/4 tsp. vanilla
    • 1 1/2 cups quick oatmeal
    • 1 1/4 cups dried cherries
    • 4 1/2 ounces of bittersweet chocolate, coarsley chopped
    • 1 cup toffee or butter brickle pieces


    Instructions


    1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or a silpat liner.
    2. In a large bowl cream the butter and the sugars until creamy. Scrape down the bowl. Add the egg and vanilla.
    3. Scrape down bowl again. Add the dry ingredients and mix well. Add the oats, dried cherries, chocolate and toffee pieces. Combine after each addition.
    4. Drop by heaping tablespoons onto each cookie sheet. Place cookies 2 inches apart. Bake for 13-16 minutes or until golden brown. I rotate the pan half way through the baking time for even baking. Cool on a wire rack.
    5. Store in an airtight container up to 2 days. Also freezes well.
