Dried Cherry Chocolate Chunk Cookies

Hello from the great state of Michigan. Just a little sample of dried cherries from our GREAT state. Enjoy!This is one of my favorite recipes. You may substitute dried cranberries for the dried cherries!
List of Ingredients
- 1 1/2 cups all purpose flour
- 1 tsp. baking soda
- 2 sticks (1 cup) butter at room temp
- 3/4 cup light brown sugar
- 3/4 cup sugar
- 1 large egg
- 1 1/4 tsp. vanilla
- 1 1/2 cups quick oatmeal
- 1 1/4 cups dried cherries
- 4 1/2 ounces of bittersweet chocolate, coarsley chopped
- 1 cup toffee or butter brickle pieces
Instructions
- Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper or a silpat liner.
- In a large bowl cream the butter and the sugars until creamy. Scrape down the bowl. Add the egg and vanilla.
- Scrape down bowl again. Add the dry ingredients and mix well. Add the oats, dried cherries, chocolate and toffee pieces. Combine after each addition.
- Drop by heaping tablespoons onto each cookie sheet. Place cookies 2 inches apart. Bake for 13-16 minutes or until golden brown. I rotate the pan half way through the baking time for even baking. Cool on a wire rack.
- Store in an airtight container up to 2 days. Also freezes well.
