    • 4 EGGS
    • 2 CUPS SUGAR
    • 1 CUP VEGETABLE OIL
    • 1 TEASPOON VANILLA EXTRACT
    • 4 CUPS ALL-PURPOSE FLOUR
    • 1 TEASPOON SALT
    • 1 TEASPOON BAKING SODA
    • 2 CUPS SOUR CREAM
    • 2 CUPS BLUEBERRIES


    Instructions


    1. PREHEAT OVEN TO 400 DEGREES
    2. GREASE 24 MUFFIN CUPS.
    3. IN A LARGE BOWL BEAT EGGS, GRADUALLY ADD SUGAR WHILE BEATING. ADD OIL SLOWLY.STIR IN VANILLA.
    4. IN A SEPARATE BOWL, SIFT TOGETHER FLOUR,SALT AND BAKING SODA.
    5. ADD DRY INGREDIENTS TO EGG MIXTURE ALTERNATELY WITH SOUR CREAM.
    6. GENTLY FOLD IN THE BLUEBERRIES.
    7. FILL MUFFIN CUPS WITH BATTER.
    8. BAKE FOR 20 MINUTES OR UNTIL MUFFINS TEST DONE.
