    THIS RECIPE WILL MAKE ABOUT A DOZEN HUSHPUPPIES AND CAN BE EASILY DOUBLED.


    List of Ingredients


    • 1/2 CUP CORNMEAL
    • 1/2 CUP ALL PURPOSE FLOUR
    • 1 TSP BAKING POWDER
    • 2 TABLESPOONS WHITE SUGAR
    • 1/4 TSP. BAKING SODA
    • 1/2 CUP BUTTERMILK
    • 1 EGG, SLIGHTLY BEATEN
    • 1 SMALL ONION, CHOPPED FINE
    • 1 1/2 TSP. VEGETABLE OIL


    Instructions


    1. COMBINE CORNMEAL, FLOUR, BAKING POWDER, SUGAR AND SALT IN A MEDIUM BOWL, MIXING WELL.SET ASIDE
    2. DISSOLVE BAKING SODA IN BUTTERMILK IN A SMALL BOWL.
    3. ADD EGG, ONION, AND OIL AND STIR WELL. ADD DRY INGREDIENTS,MIX WELL.
    4. REFRIGERATE BATTER FOR ABOUT 15 MINUTES.
    5. HEAT DEEP HOT OIL TO 350 DEGREES. DROP BATTER INTO OIL BY TABLESPOONS. COOK JUST A FEW AT A TIME. FRY FOR 3 MINUTES ON EACH SIDE OR UNTIL GOLDEN BROWN.
    6. DRAIN WELL ON PAPER TOWELS.
