    List of Ingredients


    • 1 CUP CORN MEAL
    • 1/2 CUP FLOUR
    • 1/2 TEASPOON SODA
    • 1 TEASPOON SALT
    • 1/2 CUP COOKING OIL
    • 2 EGGS, BEATEN
    • 1 CUP BUTTERMILK
    • 1 CUP CHOPPED ONIONS
    • 3/4 CUP CHOPPED FRESH OR FROZEN OKRA


    Instructions


    1. IF USING FRESH OKRA;TRIM, CUT IN ROUNDS AND DROP INTO BOILING SALTED WATER. COOK 4 TO 6 MINUTES UNTIL SOFT. DRAIN AND COOL.
    2. IF USING FROZEN OKRA JUST THAW AND DRAIN.
    3. MIX DRY INGREDIENTS.STIR LIGHTLY.
    4. BEAT TOGETHER EGGS, OIL, AND BUTTERMILK.
    5. ADD TO DRY INGREDIENTS AND STIR LIGHTLY.
    6. ADD CHOPPED ONIONS AND OKRA
    7. HEAT OIL IN A HEAVY 10 INCH SKILLET UNTIL SMOKING.
    8. POUR BATTER INTO PAN
    9. BAKE IN PREHEATED 450 DEGREE OVEN FOR 20-25 MINUTES.
