    THIS CAKE WAS POPULAR IN THE 1970'S WHEN THE WATERGATE SCANDAL WAS TAKING PLACE.


    List of Ingredients


    • 1 BOX PLAIN WHITE CAKE MIX
    • 1 BOX INSTANT PISTACHIO PUDDING MIX
    • 1 CUP VEGETABLE OIL
    • 1 CUP GINGER ALE
    • 3 LARGE EGGS


    Instructions


    1. PLACE A RACK IN THE CENTER OF THE OVEN AND PREHEAT THE OVEN TO 350 DEGREES.
    2. LIGHTLY MIST A 9X13 INCH PAN WITH COOKING SPRAY, THEN DUST WITH FLOUR, SHAKE OUT THE EXCESS FLOUR AND SET PAN ASIDE.
    3. PLACE CAKE MIX, PUDDING MIX, OIL, GINGER ALE AND EGGS IN A LARGE MIXING BOWL.
    4. BLEND WITH AN ELECTRIC MIXER ON LOW SPEED FOR 1 MINUTE. SCRAPE SIDES OF THE BOWL WITH A SPATULA.
    5. INCREASE MIXER SPEED TO MEDIUM AND BEAT 2 MINUTES MORE,SCRAPING SIDES OF BOWL IF NEEDED.
    6. POUR BATTER INTO THE PREPARED PAN, SMOOTHING THE TOP WITH A RUBBER SPATULA.
    7. BAKE FOR 35 TO 40 MINUTES OR WHEN THE CAKE SPRINGS BACK WHEN LIGHTLY PRESSED WITH YOUR FINGER
    8. REMOVE CAKE FROM OVEN AND COOL ON ARACK UNTIL COMPLETELY COOL.
    9. MEANWHILE PREPARE THE COVERUP FROSTING: 1 BOX INSTANT PISTACHIO PUDDING MIX,1 1/2 CUPS MILK, AND 1 (8OZ.) CARTON OF COOL WHIP, THAWED. WHISK THE PUDDING MIX AND MILK TOGETHER. GENTLY FOLD IN THE COOL WHIP
    10. SPREAD FROSTING OVER THE TOP OF COOLED CAKE.
    11. STORE, COVERED, IN THE REFRIGERATOR
