    Hershey's Original Fudge

    Recipe By : Hershey Chocolate Co. from old Cocoa tin

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2/3 cup Hershey's® cocoa
    3 cups granulated sugar
    1/8 teaspoon salt
    1 1/2 cups whole milk
    1/4 cup butter -- not margarine!
    1 teaspoon vanilla

    Combine cocoa, sugar, and salt. Add milk gradually.

    Mix well, bring to a bubbling boil. Boil on medium heat to soft ball stage (236f).

    Remove from heat, add butter and vanilla. Cool slightly. Beat un til thick. Pour into an 8"x8" greaded pan. Cool completely and cut into squares.

    NOTES : This is the recipe we always used when I was a kid straight from the OLD Hershey's Cocoa can. The newer versions all have corn syrup in them...I prefer this one. . Mom's would never set up...even when left for hours in the cold snow of Milwaukee..it was a long time running joke in the family..

    It takes a lot of arm strength to beat the fudge but the result is the classic fudge of "the old days". I have never had trouble with it...maybe mom didn't cook it to a true soft ball temperature.
