    Mint Frangos



    List of Ingredients


    • 1 cup butter
    • 2 cups confectioner's sugar
    • 4 eggs
    • 4 oz unsweetened chocolate -- melted and cooled
    • 2 teaspoons vanilla
    • 1/2 teaspoon peppermint extract
    • 12 vanilla wafers -- crushed
    • 1/4 cup nuts -- finely chopped


    Instructions


    1. Using electric mixer, cream butter and confectioner's sugar until creamy. Beat in eggs one at a time. Beat in the melted chocolate. Add the vanilla and peppermint flavoring. Mixture should be light and fluffy.

    2. In a separate bowl, combine crushed vanilla wafers with the nuts.
    3. Using either paper candy frills or a 9"x12" baking pan, Sprinkle half of the crumb mixture in the bottom. Carefully spread the chocolate mixture over the top. Cover top with remaining crumb mixture. Refrigerate and keep chilled.
    4. Paper frills look nicer, but it can be sliced into 1" squares when thoroughly chilled. Paper frills are available where Wilton cake and candy supplies are sold.



    Final Comments


    NOTES : Serving number is a guess. Depends on how you slice it. I received this recipe at a staff pot luck I was invited to at Stevens School when Juli was in 6th grade. It was either late 1983 or early 1984. Her teacher, Ray Phillips said it was to die for and popped it in my mouth. He was right!!
