    Five Seasons Cranberry Book by BH&G

    Recipe Introduction

    "Winning recipe from the Five Seasons Cranberry Book by BH&G Girl Scout Troop 176 used circa 1983 for their cranberry muffins. Excellent!!"

    List of Ingredients

    2 C Sifted All Purpose Flour
    1 C Granulated Sugar
    1 1/2 Tsps Baking Powder
    1 Tsp Salt
    1/2 Tsp Baking Soda
    1/4 C Shortening -- solid like Crisco
    1 Tsp Grated Orange Peel -- fresh is best
    3/4 C Orange Juice
    1 Lg Egg -- well beaten
    1 C Fresh Cranberries -- coarsely chopped
    1/2 C Chopped Nuts -- pecans or walnuts or?

    Recipe

    Sift together dry ingredients. Cut in shortening. Combine peel, juice and egg. Add to dry ingredients, mixing just to moisten. Fold in berries and nuts.

    Turn into greased 9x5x3 inch pan OR put paper muffin liners in muffin tin and fill 1/2 to 2/3 full.
    Bake muffins at 350f 20 to 25 minutes, or until done.

    Bake loaf at 350f. for 60 minutes.

    Cool. Wrap and store overnight or freeze for future use..
