    Rolled Flank Steak

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 1/2 Lbs flank steak
    1 C swiss cheese -- grated
    1 Cup Mushrooms -- Sliced
    1 C fresh parsley -- chopped
    4 eggs, hard-boiled -- Opt.
    3 Cloves garlic -- minced
    black pepper
    oil
    4 C prepared spaghetti sauce

    Pound steak as for swiss steak. With plan to roll against grain of meat, line up eggs along one edge. Add cheese, parsley, garlic, and papper. Roll tightly and secure with string. Brown in oil. Place meat in covered baking dish. Pour tomato sauce over meat. Cover amd bake at 350f. for 1 1/2 hours. Serve slices of meat with sauce with freshly cooked spaghetti. I prefer to use my own meatless spaghetti sauce.

    NOTES : This recipe was given on Seattle Today (tv) before Jeff has his own PBS program. Amounts are flexible. I tinker with the sauce...adding onion, 'shrooms, garlic, and fresh basil if it seems to be needed.
