    Homemade Pasta Variations

    I think these came from an an HP cookbook or a Sunset cookbook many years ago. The Whole Wheat is my FAVE... Serve it simple....a little butter or olive oil, garlic, pepper and parmesan.

    HOMEMADE PASTA VARIATIONS

    Remember that homemade pasta cooks in a
    flash! Have sauces etc. ready to serve when
    you have the water boiling for the pasta.

    WHOLE WHEAT PASTA

    (I do the whole thing in my food processor.
    Same measurements, just put liquids in first.
    Process mixture until it pulls away from
    sides of processor bowl.)

    Directions below are written for making in
    bowl or on counter.

    Make a well in 2 c. sifted whole wheat flour.
    Break 2 large eggs, room temperature, into
    the well. Add 2 to 3 tablespoons water. 1
    tablespoon vegetable oil and 1 teaspoon salt.
    Beat mixture in the well with a fork about
    ten strokes before working in flour.

    Knead by hand to make a rough looking dough.
    Let it rest ten minutes. Knead dough until
    the rest of the flour is used and it is
    smooth and elastic, about 10 minutes. Divide
    dough into three or four balls and place
    balls in a plastic bag; set aside to rest 30
    minutesbefore rolling out by hand or machine.
    Roll out 1 ball at a time to desired
    thickness and cut into desired shape and
    width. Makes about 4 servings.


    SPINACH PASTA (food processor is easiest)

    Cook 10 ounces of fresh or frozen spinach;
    drain well. Puree in blender with 1 large
    egg, room temperature.
    Make a well in 3 c. all purpose flour. Break
    another large egg, room temperature, into the
    well. Add 1 1/2 teaspoons salt. Beat mixture
    in well about 10 strokes. Add spinach puree
    and beat before working in the flour.
    Continue as for whole wheat pasta. serves 6


    LEMON PASTA (think chicken or seafood)

    Make a well in 2 c. all purpose flour.Add 1/3
    c. lemon juice,grated peel of 2 lemons,and
    1/2 teaspoon salt to the well. Continue as
    for whole wheat pasta. serves 4


    BASIL PASTA

    To basic recipe of Whole Wheat Pasta or any
    plain pasta recipe, add 3 tablespoons of a
    simple pesto.


    PARMESAN PASTA

    To basc recipe of Whole Wheat Pasta or any
    plain pasta recipe, add 3 ounces grated
    parmesan.

    EGG NOODLE PASTA

    Make a well in 2 1/4 cups all-purpose or unbleached flour. Break 3 room
    temperature large eggs into the well. Add 1 teaspoon salt. Beat mixture
    in the well with fork about 10 strokes before working in flour.
    Continue as directed for Whole Wheat Pasta. Serves about 6.
