    Eggnog: Enlightened Eggnog

    List of Ingredients

    1 quart milk (skim or reduced-fat)
    6 eggs
    1/4 teaspoons salt
    1/2 cup sugar
    1 teaspoon vanilla
    1 cup whipping cream, whipped
    Freshly ground nutmeg


    Recipe

    Heat milk in large saucepan until hot (do not boil or scald). While
    milk is heating, beat together eggs and salt in large bowl, gradually
    adding sugar. Gradually add hot milk mixture to egg mixture. Return
    mixture to saucepan and cook over medium-low heat, stirring constantly
    with a whisk until the mixture thickens and just coats a spoon.
    Thermometer should register 160 degrees. Stir in vanilla.

    Cool quickly by setting pan in bowl of ice or cold water and stirring
    about 10 minutes. Cover and refrigerate until thoroughly chilled,
    several hours or overnight. Pour into bowl or pitcher. Fold in whipped
    cream and dash with nutmeg.

    Makes 2 quarts, each ( 1/2 -cup) serving: 135 calories, 120 milligrams
    cholesterol.
