    Banana Cinnamon Pancakes

    List of Ingredients




    1 cup flour
    1-1/4 tsp. baking powder
    1/2 tsp. ground cinnamon
    1/4 tsp. salt
    1 cup milk
    1/4 cup dark brown sugar
    2 Tbs. vegetable oil
    1 egg
    1 tsp. vanilla extract
    2-3 bananas, peeled and mashed

    Recipe



    Combine the dry ingredients in a mixing bowl. In a separate bowl mix
    together the milk, sugar, oil, egg and vanilla. Add to the dry
    ingredients and mix until almost smooth. Add the bananas, stirring
    to combine, and allow the batter to rest for 30 minutes. For each
    pancake, pour about 1/4 cup of the batter onto a lightly greased
    nonstick skillet over moderate heat. Cook until small bubbles form
    on the surface, about 1 minute. Turn the pancakes and cook an
    additional 30-45 seconds, until golden brown. Serve with butter rum
    sauce (recipe below) or syrup of your choice.

    BUTTER RUM SAUCE:
    3/4 cup maple syrup
    2 Tbs. butter
    2 Tbs. dark rum

    Combine all sauce ingredients in a small saucepan and heat over
    moderate heat until the butter has melted. Makes 1 cup.
