    Serves 2
    For the pancakes:
    (1/2 cup) plain flour
    2 eggs, beaten
    (2/3 cup) pint milk
    (1/4 cup) caster sugar
    (1/4 stick) butter
    For the topping:
    1 orange, peeled and segmented
    (1/3 cup) sugar
    (1/4 cup) cream

    Recipe



    Preheat a medium frying pan or crêpe pan and a small saucepan.
    Combine the flour and eggs. Gradually whisk in the milk. Melt the
    butter in the frying pan or crêpe pan. Pour in a little of the
    pancake batter. When the batter starts to bubble, flip the
    pancake and cook the other side. Repeat with the rest of the
    batter. Prepare the topping by placing the sugar in the small
    saucepan. Heat until the sugar melts. Add the cream and stir
    to form a caramel sauce. Place the pancakes on a plate. Top
    with the segmented orange and the caramel sauce and serve.
