Strawberry Coffee Cake

2/3 cup butter or margarine
3 eggs
1 ¼ cups brown sugar
2 tsp ground cinnamon
2 tsp ground ginger
dash grated nutmeg
1 ¾ cups flour
1 tsp bicarbonate of soda (leavening agent)
good 1/3 cup sour cream
good 1/3 cup fresh, mashed strawberries
good 1/3 cup coarsely chopped walnuts
Recipe
Melt the fat and let cool. Beat eggs and brown sugar well until sugar has
melted properly. Mix spices, flour and bicarbonate well. Stir the melted fat
into the egg mixture, then add sour cream, strawberries and walnuts and
blend well. Last, stir the flour mixture in and stir very thoroughly.
Pour the batter in a well-greased, floured 6-cup baking dish and bake on the
lowest shelf at 350F for about 1 hour or until nicely colored, puffed up and
is done. It’s a juicy cake.
Gently loosen around the edges with a sharp knife and leave the cake in the
dish for a while before gently unmolding. Let cool well before wrapping it
up.
