1/4 cup butter
1/4 cup flour
2 cups milk
1/4 tsp. salt
1/8 tsp. pepper
6-8 hard cooked eggs
1/2 cup mayonnaise
Cornbread squares*
3-4 chopped green onions
1/2 lb. cooked bacon
3/4 cup shredded cheese
Recipe
Make white sauce by mixing butter, flour and milk.
Add salt, pepper, eggs and mayo. Mix.
Heat until eggs and mayo are hot.
Slice cornbread squares in half and spoon egg mixture over top.
Garnish with green onions, bacon and cheese.
*Cornbread Squares
1-1/4 cups cornmeal
1/2 cup flour
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup bran cereal
3/4 cup milk
2 eggs slightly beaten
1/3 cup canola oil
1/3 cup shredded cheddar cheese
3/4 cup whole kernel corn, drained
1/2 cup chopped green onion
Stir together cornmeal, flour, salt, and baking soda; set aside.
In large mixing bowl, combine cereal and milk.
Add eggs, oil, cheese, corn, and green onion. Add flour mixture, stirring lightly, just until
combined. Pour into lightly greased 8-inch square baking pan.
Bake at 400°F for 40 minutes or until golden brown.
