    3/4 cup Creamy Peanut Butter
    1/2 cup vegetable shortening (Crisco)
    1 1/4 cups firmly packed light brown sugar
    3 tablespoons milk
    1 1/2 tablespoons vanilla
    1 egg
    1 3/4 cups all-purpose flour
    3/4 teaspoon salt
    3/4 teaspoon baking soda
    10 single Peanut Butter Cups (I like Reese’s)

    Preheat oven to 375 degrees.



    Cream shortening, peanut butter, and brown sugar in a large bowl. Add egg, milk, and vanilla and mix until blended. Separately, sift flour, salt, and baking soda. Slowly add to peanut butter mix and mix until well blended. Cut peanut butter cups into eighths and add to cookie dough. Mix just until you see chocolate chunks throughout dough.



    Drop by heaping teaspoonfuls 2 inches apart onto ungreased cookie sheet (I have had best results with parchment paper or a Silpat).



    Bake at 375 for 9-11 minutes or until set and just beginning to brown. Cool 2 minutes on baking sheet and move to cooling rack.



    Makes 3 dozen cookies.
