    Best Ever Coffee Ice Cream Pie

    1 baked 9" pastry shell
    1 package (5 oz) vanilla flavor pudding mix
    3 T. instant coffee
    3 T. sugar
    3 cups milk
    1 t. vanilla
    1/2 cup cream for whipping

    Recipe



    Make and/or bake pastry shell (Use your favorite recipe or a store bought
    one). Combine pudding mix, coffee, sugar, and milk in a medium pan. Cook,
    following label directions. Pour into a medium bowl. Stir in vanilla. Chill about 1
    hour. Beat cream until stiff in a small bowl. Beat chilled pudding until
    smooth; fold in whipped cream. Pour into baked pastry shell; chill at least 30
    minutes. Serve plain or garnished with more sweetened whipped cream if desired.
