    Strawberry Pie w/Creamy Vanilla Filling

    Shortcrust dough:
    5 oz margarine or butter
    good 3/4 cup powdered sugar
    dash salt
    1 egg
    1 3/4 cups flour

    Vanilla filling:
    1 3/4 cups single cream
    2 eggs
    scant 1/4 cup sugar
    1 1/2 tbs potato starch or cornstarch
    2 tbs vanilla sugar

    Decoration:
    good 3/4 cup heavy cream
    approx 4 cups fresh strawberries

    Quickly chop together all ingredients for the shortcrust dough and press out
    2/3 of it in a pie pan, diameter approx 9". It can very well have a loose
    bottom. Put the dish plus the remaining 1/3 of the dough in the fridge for
    about 30 minutes.

    Vanilla filling: Measure all ingredients except for the vanilla sugar in a
    saucepan and simmer while stirring until it thickens. Immediately remove
    from heat and set aside to cool. After cooling, you flavor with the vanilla
    sugar.

    Heat the oven to 400F.

    Spread out the vanilla creme in an even layer in the pie crust and roll out
    the remaining dough to a lid, fitting over the creme so that it's covered.
    Pinch together at the edges and prick here and there with a fork.

    Bake the pie in the lower part of the oven for about 30 minutes, then let
    cool completely in the dish. Beat the cream and pipe or dab it out in a nice
    pattern around the edge of the pie, then decorate with oodles of fresh
    strawberries. Enjoy!
