7 pounds apples
2 cups apple juice or water
1 cup granulated sugar
3/4 cup firmly packed light brown sugar
2 T lemon juice
1 t gr cinnamon
1/2 t grated nutmeg
Recipe
core, peel, and chop apples. combine the apple juice and 1 cup of
sugar. over medium-low heat, stir constantly until the sugar is
dissolved. add the apples. bring to a boil, and boil gently until
the apples are soft and translucent, about 20 minutes. stir
occasionally to keep it from sticking. use your potato masher to
smash the apples until it is the texture you like. (you can skip the
peeling of the apples and run your mixture through a food strainer
at this point if you'd rather have smooth applesauce.) add the brown
sugar and the lemon juice, and stir until sugar is completely
dissolved. bring to a boil, and simmer until sauce thickens, about
10 minutes. ladle into hot jars making sure you don't have air
pockets. process in 200 degree water bath for 20 minutes.
makes 4 pints or 2 quarts
